When the muggy weather of summer wears you out and you lose your appetite, you need to try a gourmet dish to blow away the terrible summer heat. Naengmyeon is a Korean traditional dish that most Koreans enjoy, especially in the summer. Just a bowl of icy naengmyeon will bring back your appetite.
Bibim naengmyeon is cold buckwheat noodles with spiced Gochujang or Korean hot pepper paste, called Bibim Sauce.
Bibim Sauce is specially blended Gochujang with spices and condiments such as minced garlic, onion, sesame oil, soy sauce, vinegar, and a bit of sugar, which whets appetite with well combined spicy flavor and its beautiful color.
Raw vegetable juliennes of cucumber, carrot and slices of Korean pear are often topped with half of a hard boiled egg.
All the ingredients or toppings are to be stirred thoroughly just before eating.
How to cook.
1. Boil the noodles in boiling water (700 ml) for 2 or 3 minutes.
2. Drain the water and rinse the noodles in cold water or running water a couple of times.
3. Put the noodles in a bowl, add the Bibim sauce. You can add boiled egg, cucumber, pickled radish, pear etc, as a topping if you want. I only had egg and cucumber available, so I just added those two.
4. Enjoy! (You can add the mustard sauce if you want)
